Study Overview

This course covers various topics to ensure that upon successful completion, you are equipped with the essential skills and knowledge to progress to your next steps. 

Units covered throughout this cookery course include:

  • Food safety in catering
  • Introduction to employability in the catering and hospitality industry
  • Health and safety awareness for catering and hospitality
  • Introduction to healthier foods and special diets
  • Introduction to kitchen equipment
  • Prepare and cook food by boiling, poaching and steaming
  • Prepare and cook food by stewing and braising
  • Prepare and cook food by baking, roasting and grilling
  • Prepare and cook food by deep frying and shallow frying
  • Regeneration of pre-prepared food
  • Cold food preparation

This course includes a minimum of 30 hours work related experience. 

Progression and Employment Opportunities

Level 2 Catering or another Level 2 qualification.

Additional Qualifications Studied

You will study Life Skills and also continue to study a maths and English qualification if you have not achieved a Grade 4 or Functional Skills Level 2. 

We also work with a range of stakeholders, including City & Guilds and The New London Restaurant, to improve our cookery programmes based on their feedback.
