City & Guilds Diploma in Professional Cookery, Level 2

This Professional Cookery course is highly recognised by employers; by completing this one-year course, you will gain qualifications to become a professional within the hospitality and catering industry. This programme meets the needs of learners who work or want to work as professional chefs in the catering and hospitality sectors. The varied course content allows learners to learn, develop and practise the skills required for employment and/or career progression in the catering and hospitality sector.
Study Overview
To ensure that you are competent in Professional Cookery, this course includes a minimum of 30 hours work related experience and covers various units, enabling a thorough understanding.
Units studied are:
- Health and safety in catering and hospitality
- Food safety
- Legislation in food and beverage service
- Prepare and cook meat and offal
- Prepare and cook fish and shellfish
- Prepare and cook fruit and vegetables
- Prepare and cook poultry
- Prepare and cook stocks, soups and sauces
- Principles of customer service in hospitality, leisure and travel and tourism
- Giving customers a positive impression
- Food service
- Investigate the catering and hospitality industry
Progression and Employment Opportunities
- Progression to further study could include the Level 3 Advanced Professional Cookery apprenticeship, or the Technical Diploma or Diploma in Professional Cookery.
- If you would prefer to enter employment, career opportunities may include positions as a Commis Chef, Junior Chef de Partie.
Additional Qualifications Studied
You will study Life Skills and also continue to study a maths and English qualification if you have not achieved a Grade 4 or Functional Skills Level 2.
We also work closely with a range of stakeholders, including City & Guilds and The New London Restaurant, to improve our cookery programmes based on their feedback.
